The white wine of the Pyrgaki label is dry with high acidity, medium to full body and a medium lemon green color. The acidity and sea feeling of Assyrtikos "marries" perfectly with shellfish, seafood and fish, especially if you add a little lemon on top. On the other hand, ideal earthy combinations are lamb or goat in the oven, since the fatiness of the dish calls for the refreshing acidity of Assyrtikos.
